Ingredients For Grilled Vegetable Club Sandwich With Mint Coriander Sauce (Green Chutney)
- Bread – White bread works best for this sandwich. Living in the UAE, I prefer Yawmi or Lusine for my grilled vegetable sandwich- super fresh and tasty! That being said, you may use brown or whole grain bread as healthier options, but I can not guarantee the taste. You can even try sourdough or rye bread.
- Butter – Use 1-2 teaspoons of butter on each slice of bread or just slather till you hear your ancestors say ‘that’s enough, my child!’ 😀 I use Lurpak salted butter but any butter will work here. Pro Tip: Spreading the sauce over the butter means your bread won’t get soggy.
- Cheese – I use (burger) cheddar cheese slices but you may use a combination of cheddar, gouda or any other flavorful cheese.
- Chat Masala – Every desi household has this on hand. The one at my place is my mum’s special recipe and it’s hands-down the best I have ever tasted. Use any chat masala of your choice.
- Vegetables – Except for (boiled) potato, the rest of the vegetables are not cooked. The vegetables invited to this beautiful chutney-butter-bread union are the all time favorite ones- thinly sliced potatoes, cucumbers and tomatoes. I added shredded purple cabbage and sliced lettuce just to throw in some extra color. But by all means, it’s your sandwich – you do you 🙂
- Mint Coriander Sauce (Green Chutney) – Many different versions exist depending on the person or place. You can find plenty of recipes online, but I will give you the basic one I used (which by the way, is always available in my fridge since my husband lives more off it than oxygen).
How To Make The Best Grilled Vegetable Club Sandwich
- First things first, boil one large potato. I microwave the potato- the most amazing trick I learn from my mum. Takes 5-6 minutes ONLY! Click here to see how it’s done!
- Slice up your vegetables: Just one of each, cucumber and tomato and boiled potato. Shred purple cabbage and lettuce if you like.
- Line up the bread slices, and slather some salted butter and chutney over it.
- First Layer: Sliced potatoes, cucumber, lettuce and cabbage
- Second Layer: Layer tomato, chat masala and cheese
- Top with the final slices of bread
- Grill these sandwiches on a buttered griddle, cut into quarters and secure with toothpicks. Surely tops the list of easy to make, perfect to present!

This grilled vegetable club sandwich hosts the iconic green chutney found in almost every Indian or Pakistani household.
With mint, cilantro and green chilies being constant, the remaining ingredients could be yogurt, ginger, garlic, lemon juice and many more.
I added mayonnaise to it to create a creamy version.
1) What You Need To Make Mint Coriander Sauce
This green chutney is scrumptious on its own, but in this sandwich? Phenomenal. Kicked up a few notches with the addition of mayonnaise!
For this creamy green chutney, you need:
- 1/2 bunch coriander leaves
- 1/2 bunch mint leaves
- 4 green chilies
- ½ teaspoon salt
- 1 tablespoon mayonnaise (heaped)
- 1 tablespoon sugar
- 2 cloves of garlic
2) How to make Mint Coriander Sauce (Green Chutney)
Blend these ingredients. Or pulse in a food processor. Bam! Easy-Peasy!

Storing Club Sandwiches
This makes 4 grilled club sandwiches, so 16 small triangles. I’d say you won’t be left with leftovers, but if you do, just store in an air-tight box, and be sure to re-toast them. (I love using an electric toaster for reheating!)

Ingredients
- 12 slices white bread
- 1 large boiled potato thinly sliced
- 1 large cucumber thinly sliced
- 1 large tomato thinly sliced
- 1 cup lettuce shredded
- 1 cup purple cabbage shredded
- spreadable butter
- 4 cheddar cheese slices
- chat Masala as needed
Mint Coriander Sauce [Green Chutney]
- ½ bunch coriander leaves
- ½ bunch mint leaves
- 4 green chilies
- ½ teaspoon salt
- 1 tablespoon mayonnaise heaped
- 1 tablespoon granulated white sugar
- 2 cloves garlic
Instructions
Mint Coriander Sauce (Green Chutney)
- Blend or process all the ingredients in a blender or food processor. Keep aside.
Grilled Vegetable Club Sandwich with Mint Coriander Sauce (Green Chutney)
- Arrange 12 slices of bread on a cutting board. Spread each slice with butter and then mint coriander sauce (green chutney) .
- Over 4 of the bread slices, place thinly sliced boiled potato, then thinly sliced cucumber, then shredded purple cabbage and lettuce.
- On another four slices, place thinly sliced tomatoes and cheddar cheese slices and sprinkle chat masala to taste. Place each of these tomato cheddar bread slices over the other 4 prepared bread slices.
- Cover these sandwiches with the remaining four slices.
- Heat a griddle on low flame, brush some butter on it and then place 1 or 2 sandwiches at a time. Don't rush. Flip when the bottom is beautiful golden color. Once the other side is also golden, remove to cutting board. Cut into halves or quarters and insert toothpick to secure.
- Serve hot!
