Why You’ll love this recipe
The dough is crisp, slightly dense, yet tender—truly the only dough recipe you’ll ever need. It turns out perfectly every single time, with a rise time of just 45 minutes if your yeast is fresh and you use lukewarm water. You can even substitute active dry yeast.
After numerous attempts, I’ve found this dough is perfect for mini pizzas and personal pizzas.
You can even parbake the rolled dough and freeze it in Ziplock bags, or freeze fully prepared mini or personal pizzas for midnight cravings or your kids’ lunch boxes.
The Cajun ground beef topping can be made a day in advance, making meal prep a breeze.

- ½ tablespoon red pepper flakes
- 1 teaspoon smoked paprika
- ½ tablespoon minced garlic
- ½ teaspoon ground black pepper
- ¼ teaspoon salt or to taste
- 1½ tablespoons vinegar
- 1 tablespoon oil
For The Sauce
- 70 g low fat mayonnaise
- 1½ tbsp chili garlic sauce
- salt to taste
- garlic powder to taste
- red pepper flakes to taste
Other Pizza Toppings
- Green bell pepper, chopped as needed
- Tomatoes, chopped as needed
- onion, sliced as needed
- 2 green chilies, sliced optional
- dried oregano as needed
- ½ cup mozzarella, shredded
- ½ cup cheddar cheese, shredded
Prepare The Cajun Pizza Dough
- In the bowl of a stand mixer, combine the all-purpose flour, sugar, instant dry yeast, baking powder, milk powder, and salt.
- Add the vegetable oil and lukewarm water to the dry ingredients.
- Start the stand mixer on low speed as you pour in the lukewarm water, then increase the speed to medium-high and knead for about 5 minutes, until the dough is smooth and elastic.
- If you are kneading by hand, mix until a dough forms, then transfer the dough to a floured surface and knead for about 7-10 minutes until smooth and elastic.
- Shape the dough into a ball, brush it with oil, and place it back in the bowl, which has also been brushed with oil.
- Cover the bowl with a damp cloth and let the dough rise in a warm place for about 1 hour, or until doubled in size.
Make The Cajun Ground Beef Pizza Topping
- Combine ground beef, red pepper flakes, smoked paprika, Cajun seasoning, minced garlic, ground black pepper, salt, and vinegar.
- Marinate the mixture overnight in the refrigerator, or for at least 30 minutes if short on time.
- Heat 2 tablespoons of oil in a pan or skillet over medium heat.
- Cook the marinated beef until fully done. Set aside and let cool.
Prepare The Sauce
- In a small bowl, mix together the low-fat mayonnaise and chili garlic sauce.
- Season with salt, garlic powder, and red pepper flakes to taste. Set aside.
Assemble The Cajun Pizza
- Preheat your oven to 220°C (425°F).
- On a floured surface, roll out the dough to your desired thickness and shape. For example, you can make one large rectangle (similar in size to a Pizza Hut limo pizza) and one personal-sized pizza, like I did. (For the personal pizza, I made it non-spicy with plain mayonnaise as the sauce, fewer veggies, more cheese, and no green chilies for my toddler.)
- Transfer the rolled-out dough to a pizza stone, baking sheet, or large rectangle pan. Lightly grease the pan beforehand.
- Evenly spread the prepared sauce over the large rectangle dough.
- Sprinkle the Cajun ground beef mixture over the sauce.
- Add the chopped green bell pepper, tomatoes, sliced onion, and green chilies (if using).
- Top with shredded mozzarella and cheddar cheese.
- Sprinkle dried oregano over the toppings.
- Bake for about 20 minutes, or until the crust is golden and the cheese is bubbly and melted. Baking times may vary depending on your oven. Remove from the oven and let cool for a few minutes before slicing.

How to store homemade pizza
Storing homemade pizza properly ensures it stays fresh and delicious for later enjoyment. Here are a few methods you can use:
Refrigeration Method
- Allow the pizza to cool down to room temperature first.
- Wrap individual slices or the whole pizza tightly with plastic wrap or aluminum foil.
- Place the wrapped pizza in an airtight container or sealable plastic bag to prevent exposure to air and moisture.
- Store in the refrigerator for up to 3-4 days.
Freezing Method
- If you want to store the pizza for longer periods (up to a month or more), freezing is ideal.
- Again, allow the pizza to cool completely.
- Wrap each slice or the whole pizza tightly in plastic wrap and then in aluminum foil to prevent freezer burn.
- Alternatively, place slices on a baking sheet and flash-freeze them for about an hour before transferring them to a freezer bag or airtight container.
- Label the container with the date to keep track of storage time.
- When ready to eat, thaw the pizza in the refrigerator overnight and then reheat in the oven or toaster oven for best results.
You can also freeze the prepared pizza base the same way, after baking it for 10 minutes.
Room Temperature (Short Term)
- If you plan to consume the pizza within a few hours and want to keep it at room temperature, place it on a plate and cover loosely with aluminum foil.
- Avoid leaving it out for more than 2 hours to prevent bacterial growth.
Reheating Pizza
- For refrigerated pizza, reheat slices in a microwave or air fryer for a couple of minutes.
- Alternatively, reheat in a skillet on the stovetop over medium heat, covered, until the crust is crispy and the toppings are heated.
- For frozen pizza, thaw it first and then reheat using one of the above methods.
By following these methods, you can ensure your homemade pizza stays fresh, safe to eat, and retains its delicious flavors for whenever you’re ready to enjoy it again.
