Ingredients

For The Chicken

  • 260 g chicken tender breasts I use Sadia Chicken Tenders
  • ½ g salt 2g or to taste
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • ½ teaspoon smoked paprika
  • 2 teaspoons soy sauce 9g
  • 2 teaspoons apple cider vinegar 6g
  • 3 cloves minced garlic 9g
  • 2 tablespoons lemon juice 30g

For Salad Items:

  • 144 g lettuce 5-6 large leaves
  • 200 g cucumber 1 medium
  • 84 g carrot 1 medium
  • 126 g tomato 1 large
  • 2 large eggs, boiled and sliced

For The Salad Dressing

  • 17 g Light Mayonnaise I used Noor Brand
  • 70 g low fat plain Greek yogurt I used Nada Brand
  • 7 g Dijon mustard
  • 1 teaspoon honey slightly heaped 9g
  • 2 cloves minced garlic 6g
  • ½ tablespoon lemon juice
  • salt to taste
  • ½ teaspoon black pepper

Instructions

Dressing:

  • In a bowl, mix together the Noor Mayonnaise Light, Nada Low Fat Plain Greek Yogurt, Dijon Mustard, Honey, Minced Garlic, Lemon Juice, Salt, and Black Pepper until well combined. Set aside.

Chicken:

  • Slice the chicken tenders into breast-like strips.
  • In a separate bowl, marinate the chicken with salt, black pepper, red pepper flakes, smoked paprika, soy sauce, apple cider vinegar, minced garlic, and lemon juice. Make sure the chicken is evenly coated with the marinade.
  • Preheat the air fryer to 180°C (350°F).
  • Place the marinated chicken in the air fryer basket and cook for 12-15 minutes, depending on the thickness of the chicken strips. Ensure the chicken is cooked through and has a golden-brown exterior.
  • Once cooked, allow the chicken to cool slightly before slicing. For a warm salad, slice the chicken while it's still warm.

Salad:

  • Chop the lettuce, cucumber, carrot, and tomato into bite-sized pieces.
  • In a large salad bowl, combine the chopped lettuce, cucumber, carrot, and tomato.
  • Add the sliced chicken and sliced boiled eggs to the salad bowl.

Assembling the Salad:

  • Pour the prepared dressing over the salad and toss everything together until the salad is well coated with the dressing.
  • Serve immediately and enjoy!
