Ingredients

For The Chicken

  • 174 g Skinless Boneless Chicken Breast
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For The Salad

  • 147 g carrot finely chopped
  • 100 g cucumber bite-size pieces
  • 225 g apple bite-size pieces
  • 104 g green bell pepper finely chopped

For The Dressing

  • 1/2 tbsp. vinegar
  • 58 g low fat milk
  • 50 g Light Mayonnaise (I use Noor Lite Mayonnaise)
  • 100 g low fat yogurt
  • 20 g full fat labneh (I use Al-Rawabi or Lulu's)
  • 1/2 teaspoon salt or more to taste
  • 1/2 teaspoon black pepper powder or more to taste
  • 1/2 teaspoon stevia

Instructions

  • Boil the chicken in some water, salt and pepper.
  • Chop the salad ingredients in a large bowl. Bell peppers and carrots should be finely chopped while apples, chicken and cucumbers can be chopped into bite-sized pieces.
  • Mix the dressing ingredients in a small bowl.
  • Combine everything and mix well. divide into 2 equal portions by weight for accuracy. Refrigerate till ready to eat.

Notes

This salad tastes best with crisp, juicy apples like China Fuji Apples.
