Ingredients

  • 12 slices white bread
  • 1 large boiled potato thinly sliced
  • 1 large cucumber thinly sliced
  • 1 large tomato thinly sliced
  • 1 cup lettuce shredded
  • 1 cup purple cabbage shredded
  • spreadable butter
  • 4 cheddar cheese slices
  • chat Masala as needed

Mint Coriander Sauce [Green Chutney]

  • ½ bunch coriander leaves
  • ½ bunch mint leaves
  • 4 green chilies
  • ½ teaspoon salt
  • 1 tablespoon mayonnaise heaped
  • 1 tablespoon granulated white sugar
  • 2 cloves garlic

Instructions

Mint Coriander Sauce (Green Chutney)

  • Blend or process all the ingredients in a blender or food processor. Keep aside.

Grilled Vegetable Club Sandwich with Mint Coriander Sauce (Green Chutney)

  • Arrange 12 slices of bread on a cutting board. Spread each slice with butter and then mint coriander sauce (green chutney) .
  • Over 4 of the bread slices, place thinly sliced boiled potato, then thinly sliced cucumber, then shredded purple cabbage and lettuce.
  • On another four slices, place thinly sliced tomatoes and cheddar cheese slices and sprinkle chat masala to taste. Place each of these tomato cheddar bread slices over the other 4 prepared bread slices.
  • Cover these sandwiches with the remaining four slices.
  • Heat a griddle on low flame, brush some butter on it and then place 1 or 2 sandwiches at a time. Don't rush. Flip when the bottom is beautiful golden color. Once the other side is also golden, remove to cutting board. Cut into halves or quarters and insert toothpick to secure.
  • Serve hot!

Notes

  1. Don't rush the grilling process on the griddle. Remember, taking time and care at this step is the secret to a perfect golden crust and a crunchy bite.
  2. Slice the cucumber, tomato, potato, lettuce and cabbage as thinly as possible.
  3. Use flavorful cheese.
  4. Use garlic butter instead of regular butter to notch-up those flavors.
  5. Place fancy toothpicks for a prettier presentation.
